Coastal Mojito Cocktails
The island of Cuba is the birthplace of the mojito, and today we’d love to share our favourite coastal mojito recipes. Our fave (apart from the classic mojito)… the frozen coconut mojito is everything you’re looking for in a coastal drink. Enjoy!
Classic Mint Mojito

Ingredients
1/2 oz. lime juice (squeezed fresh)
3 lime wedges
1 teaspoon brown sugar
2 oz. white rum
1 tablespoon Malibu coconut rum
1 ounce (2 tablespoons) cream of coconut
6 fresh mint leaves
1 cup chilled club soda
pinch of grated coconut
ice

Instructions
Muddle 6 fresh mint leaves, lime juice, 3 lime wedges, and brown sugar in the bottom of a cocktail shaker. Shake it! Add white rum, coconut rum, and cream of coconut. Fill shaker with ice, and stir, stir, stir vigorously. Strain mixture into a tall glass, and top with chilled club soda. Garnish with lime + mint leaves and top off with club soda. Enjoy!
Watermelon Mojito

Ingredients
2 1/2 to 3 pounds watermelon flesh (remove the pits)
1/2 cup fresh lime juice
1/4 cup packed mint leaves, plus more for garnish
2 1/2 cups white rum
1/4 cup agave syrup
2 fresh mint leaves
ice

Instructions
Use a blender, add watermelon flesh, fresh lime juice and mint (in batches) until smooth. Strain into a pitcher. Mix in rum and agave syrup. Serve in glasses filled with ice. Garnish with lime + mint leaves + chunks of watermelon. Enjoy!
Frozen Coconut Mojito

Ingredients
1 can full-fat coconut milk or coconut cream
1/4 cup lime juice
1 handful fresh mint leaves
6 cups chopped watermelon (don’t forget to place in the freezer overnight to freeze)
1/2 cup coconut rum
shredded coconut for garnish
lime wedge for garnish
mint sprig for garnish

Instructions
Combine the coconut milk or cream with the rum, lime juice and mint leaves in the blender and blend, blend, blend. Add the frozen watermelon chunks (a little at a time), blending until smooth but still slushy. Pour the drinks then top with any combination of shredded coconut, or a lime wedge or watermelon wedge, and sprig of mint for garnish. Enjoy!
Strawberry Mojito

Ingredients
4 strawberries
8 mint leaves
1/2 ounce syrup (1:1 turbinado sugar and water)
3/4 ounce fresh squeezed lime juice
2 ounces white rum
1 ounce sparkling water
crushed ice

Instructions
Place the strawberries, mint, and syrup in the bottom of a glass, and muddle until the strawberries are smushed and juicyyyy (crumple the mint with your hands to release the flavour). Then add crushed ice on top of the strawberries and mint, and pour in the lime juice and rum. Use a teaspoon to stir the drink (don't stir too vigorously). Fill the remainder of the glass with more crushed ice, then top with sparkling water. Enjoy!
Mango Mojito

Ingredients
3 limes
1 very ripe, large, diced mango
6 tsp caster sugar
½ x 28g pack mint, leaves picked
180ml white rum
crushed ice
chilled soda water (to top up)
extra mango, mint + lime for garnish

Instructions
Squeeze the juice from 1½ limes and blend with the mango to give a smooth purée consistency. Cut the rest of the limes into quarters, then cut each wedge in half again. Put 2 pieces of lime in a glass for each person and add 1 teaspoon of caster sugar and 5 mint leaves to each glass. Muddle everything together to release all the flavours from the lime and mint. Divide the mango purée between the glasses and add 30ml of white rum and a handful of crushed ice to each one, stirring well to mix everything together. Top up with soda water to serve and garnish with extra mint. Enjoy!
Pink Grapefruit Mojito

Ingredients
handful fresh mint leaves
1/2 tsp sugar
1/4 cup fresh pink grapefruit juice (1/2 a grapefruit)
juice of 1 lime
2 shots of light rum (approx 3 ounces)
1 tsp lime juice
a splash of blood orange juice or soda for colour (optional)
sparkling water
ice

Instructions
Use a cocktail mixer, put the mint leaves in the bottom of the mixer (or you can do this in a tall glass) along with the sugar and smash them a bit with the back of a spoon. If you have a muddler, use it. Then add the grapefruit juice, fresh lime, rum, and blood orange juice or soda (optional), along with the ice; and stir gently. Fill the rest of the glass with sparkling water. Simply garnish with a lime wedge and mint leaves. Enoy!
Passion Fruit Mojito

Ingredients
1 ounce of lime juice
2 ounces of passion fruit (with seeds)
3 ounces of club soda
1 ounce of white rum
5 mint leaves
2 tablespoons of sugar
crushed ice
lime wedges and mint sprigs for garnish

Instructions
Muddle the mint leaves with sugar and lime juice in a tall glass (or cocktail mixer). Then stir in the passion fruit, club soda, and rum. Finally, add a handful of crushed ice, and garnish with a lime wedge and mint sprig. Enjoy!
